Ultimate Caesar Salad
Dressing:
• 1/2 C hemp hearts
• 2+ TBSP nutritional yeast
• 1 clove garlic (opt)
• 1 TSP miso paste (opt)
• 1/2 TSP sea salt
• Sprinkle of pepper
• Water and olive oil to thin
Salad:
• 2 cups dark leafy greens
• Pan fried tempeh
• Roasted pumpkin seeds
• Sprouts
Notes: Could use sunflower seeds instead of hemp hearts (may need to adjust other ingredients to hide the bitter flavour); I also like to throw in some pumpkin seeds in the dressing too. Many restaurants make coconut, beet or carrot bacon to add a nice kick to the salads too.
