Salad Rolls

Ingredients:

• Rice paper
• Choice of filling: sauteed mushrooms, fried tofu/tempeh, carrots, avocado, beet tops, arugula
• Choice of garnish: pea shoots, broccoli sprouts, cilantro, sesame seeds

Instructions:
Chop up any of your fav veggies, greens and protein into bite sized pieces. Portion everything into separate bowls for easier access. Run a sheet of rice paper under warm water, lay flat on a cutting board, load it up, and gently roll and fold (kind of like a burrito).
