Chickpea Chocolate Chip Cookies

Ingredients

  • 1.5 C chickpeas (soaked, cooked)

  • 1/2 C leftover pulp from dairy free milk (opt)

  • 1/2 C vegan chocolate chips

  • 1/3 C maple syrup

  • 4 TBSP nut/seed butter

  • 2 TSP vanilla extract

  • 1 TSP coconut oil (opt)

  • 1 TSP baking powder

  • 1/4 TSP each of any fav spices (cardamom, cinnamon, etc.)

  • Pinch of salt

Instructions:

  • Preheat oven to 350F

  • Smudge choice of oil on a baking sheet

  • Blend all the ingredients except chocolate chips in a food processor

  • Fold in chocolate chips

  • Roll mixture into little circles, spacing out on the baking sheet

  • Flatten with a fork

  • Bake for 8-10min

  • Let cool

Notes:

The mixture will be very wet. Keep a bowl of warm water beside you and wet your hands each time you make a circle. Do the same when flattening with the fork; wetting after each cookie. The cookies will be very soft when coming out of the oven, they will harden as they cool. Feel free to use a different nut/seed butter and experiment with different spices and herbs.
